- 4 bunches fresh lychees
- 500 ml clear rum
- 1 empty 1.75 litre water bottle (Eau Vive works nicely)
- Optional 50 grams granulated sugar
Peel the lychees, and remove the seeds. Pop each one into the water bottle, and continue filling until you reach the bottom of the label (about 0.75 litre). Fill to just below the top of the bottle with rum. Add sugar to compensate for less-sweet lychees, or for a particularly sweet taste. Seal the bottle, and don’t open it until ready to drink. Shake once or twice a day for one week. Ready after one week, but for best results wait 2 or more weeks!
